“Heart-Warming” – Rose & Saffron Kheer
(Ayurvedic Rice Pudding)

A delicately creamy ayurvedic rice pudding, refined with saffron, rose water and cardamom – like a gentle hug in dessert form.
Perfect as a loving gesture or the final course of an Ayurvedic brunch.

Ingredients (for 2-3 servings)

 

Preparation

  1. Rinse the rice until the water runs clear. Then soak in water for about 20 minutes (optional, for a softer texture).
  2. Heat the milk in a saucepan, add the cardamom, optional cinnamon stick and ghee. Bring to a boil.
  3. Drain the rice and add it to the milk. Simmer over low heat for about 30–40 minutes, stirring regularly, until creamy.
  4. In the last 10 minutes, dissolve the saffron threads in a little warm milk and stir in.
  5. Once the kheer reaches the desired consistency, remove the cinnamon stick and stir in the rose water and sweetener.
  6. Spoon into bowls and decorate with chopped nuts and rose petals.
  7. Serve lukewarm.
