
“Heart-Warming” – Rose & Saffron Kheer
(Ayurvedic Rice Pudding)
A delicately creamy ayurvedic rice pudding, refined with saffron, rose water and cardamom – like a gentle hug in dessert form.
Perfect as a loving gesture or the final course of an Ayurvedic brunch.
Ingredients (for 2-3 servings)
Preparation
- Rinse the rice until the water runs clear. Then soak in water for about 20 minutes (optional, for a softer texture).
- Heat the milk in a saucepan, add the cardamom, optional cinnamon stick and ghee. Bring to a boil.
- Drain the rice and add it to the milk. Simmer over low heat for about 30–40 minutes, stirring regularly, until creamy.
- In the last 10 minutes, dissolve the saffron threads in a little warm milk and stir in.
- Once the kheer reaches the desired consistency, remove the cinnamon stick and stir in the rose water and sweetener.
- Spoon into bowls and decorate with chopped nuts and rose petals.
- Serve lukewarm.
