
Stewed breakfast apples with Ayurvedic spices
(Recipe for 2 servings)
A warm, nourishing Ayurvedic breakfast for body and senses.
Gently stewed apples, harmoniously enhanced with saffron, ginger, cardamom, anise and other warming spices – this Ayurvedic breakfast dish is ideal for chilly mornings, strengthens digestive power, and provides a comforting start to the day. Dried mulberries add natural sweetness, while roasted nuts lend texture and energy.
Ingredients (for 2 servings)

Preparation
- Soak the saffron strands in the apple juice and ideally let them infuse overnight in the fridge.
- Peel, core and dice the apples. Finely chop the ginger.
- Gently heat the ghee or coconut oil in a saucepan. Lightly crush the cardamom pods and briefly roast them along with the cloves, anise, turmeric and ginger until the spices release their aroma.
- Add the apple cubes and mulberries, then deglaze with the saffron-infused apple juice and lemon juice.
- Let everything simmer gently over low heat for about 15 minutes.
- Divide into two bowls. Lightly toast the almonds or walnuts in a dry pan, coarsely chop them, and sprinkle over the warm apple dish.
- Optionally, serve with a dollop of whipped cream or almond butter – and enjoy while still warm.
Tip:
If you have strong digestive fire (Agni), you can round off this breakfast with a small spoonful of whipped cream – ideally refined with a touch of cardamom or cinnamon to aid digestion. In classical ayurvedic teachings, the combination of fruit and dairy is generally avoided, as it is considered hard to digest. Listen to your body and enjoy with full attention.
