Asafoetida, or asafetida or Hing, is a popular spice."Astanga Hridaya", one of the oldest Ayurvedic texts, documents its wide range of beneficial properties.
It has a strong distinctive odour, and should therefore be used very sparingly (less than a pinch).
Asafoetida is the perfect alternative to onions and garlic, which are not used in Ayurvedic cooking. Bean, curry and dal dishes are often flavoured with asafoetida because of its much appreciated Vata-balancing properties.
Add to food during cooking. Store in a cool and dry place. Keep bottle tightly closed after use.
